Ingredients:
✅ 2 cups of white rice
✅ 3 large onions, thinly sliced
✅ 3 tablespoons of olive oil
✅ 1 teaspoon of sugar
✅ 1 teaspoon of salt
✅ 1/2 teaspoon of black pepper
✅ 1 tablespoon of chopped fresh herbs (thyme, rosemary, or parsley)
✅ 1 cup of grated cheese (cheddar, gouda or mozzarella)
✅ 4 cups of chicken or vegetable broth
✅ 1 cup of heavy cream
Instructions:
1️⃣ Preheat your oven to 375°F (190°C).
2️⃣ In a large pan, heat the olive oil over medium heat. Add the sliced onions, sugar, and a pinch of salt. Cook slowly until the onions are caramelized and golden brown. This process may take up to 15-20 minutes.
3️⃣ While the onions are caramelizing, rinse the rice under cold water until the water runs clear. Drain thoroughly.
4️⃣ When the onions are caramelized, add the drained rice to the pan. Stir to ensure that the rice is well coated with the onion mixture.
5️⃣ Add the broth to the pan, increase the heat, and bring the mixture to a boil.
6️⃣ Once boiling, reduce the heat to low, cover the pan, and let it simmer for about 10 minutes.
7️⃣ Stir in the heavy cream and half of the grated cheese into the rice mixture. Sprinkle the chopped herbs, salt, and pepper, and mix well.
8️⃣ Transfer the mixture to a casserole dish and top with the remaining cheese.
9️⃣ Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and golden.
