Creamy Almond Truffles with Dark Chocolate Drizzle

Ingredients:
✅ 1 cup raw almonds
✅ 2 cups white chocolate chips
✅ 1/2 cup heavy cream
✅ 1/2 cup dark chocolate chips
✅ 1 tablespoon coconut oil

Instructions:
1️⃣ Start by roasting the almonds in a dry pan over medium heat until lightly toasted and fragrant. Set aside to cool.
2️⃣ In a double boiler or microwave, melt the white chocolate chips with the heavy cream, stirring until smooth.
3️⃣ Once the almonds are cooled, finely chop them and fold into the melted white chocolate mixture.
4️⃣ Using a small scoop or spoon, form the mixture into small balls and place them on a parchment-lined baking sheet.
5️⃣ Chill in the refrigerator for about 20 minutes, or until firm.
6️⃣ While the truffles are chilling, melt the dark chocolate chips and coconut oil together, stirring until smooth.
7️⃣ Once the truffles are firm, drizzle the melted dark chocolate over them using a spoon or a piping bag.
8️⃣ Return the truffles to the refrigerator to set the dark chocolate, about 15 minutes.
