Creamy Bacon and Cheese Casserole

Ingredients:
✅ 6 slices of bacon
✅ 2 cups of shredded cheddar cheese
✅ 2 cups of cream
✅ 1 cup of milk
✅ 2 lbs of potatoes, peeled and thinly sliced
✅ 1 onion, finely chopped
✅ 3 cloves of garlic, minced
✅ 1 teaspoon of thyme
✅ Salt and pepper to taste
✅ Fresh parsley for garnish

Instructions:
1️⃣ Preheat your oven to 400°F (200°C).
2️⃣ Cook the bacon in a skillet over medium heat until crispy. Set aside, reserving 2 tablespoons of the bacon fat.
3️⃣ In the same skillet, sauté the onion and garlic in the bacon fat until soft and fragrant.
4️⃣ In a large bowl, combine the cream, milk, cooked onion and garlic, thyme, salt, and pepper. Stir well.
5️⃣ Add the sliced potatoes to the cream mixture and mix until the potatoes are well coated.
6️⃣ Transfer half of the potato mixture to a baking dish, spreading it out evenly. Sprinkle half of the cheese and crumbled bacon on top.
7️⃣ Repeat with the remaining potato mixture, cheese, and bacon.
8️⃣ Cover the dish with foil and bake for 20 minutes. Then remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and the potatoes are tender.
9️⃣ Let the casserole cool for a few minutes before garnishing with fresh parsley and serving.
