Ingredients:
✅ 2 cups mixed vegetables, such as zucchini, bell peppers, and mushrooms
✅ 1 cup heavy cream
✅ 2 cups shredded cheese, such as Gruyère or Cheddar
✅ 1 cup panko breadcrumbs
✅ 2 tablespoons melted butter
✅ 2 tablespoons fresh parsley, chopped
✅ Salt and pepper, to taste
Instructions:
1️⃣ Preheat your oven to 375°F (190°C).
2️⃣ In a large pan, sauté the mixed vegetables until they are tender.
3️⃣ Add the heavy cream to the pan, stirring until the vegetables are well coated. Season with salt and pepper.
4️⃣ Stir in 1 ½ cups of the shredded cheese, allowing it to melt into the creamy vegetable mixture.
5️⃣ Transfer the creamy vegetables into a white ceramic or porcelain baking dish.
6️⃣ In a separate bowl, combine the panko breadcrumbs with the melted butter, then sprinkle this mixture evenly over the top of the vegetables.
7️⃣ Sprinkle the remaining ½ cup of shredded cheese on top of the breadcrumbs.
8️⃣ Bake the gratin in the preheated oven for about 25-30 minutes, or until the top is golden brown and the cheese is bubbly.
9️⃣ After removing the gratin from the oven, sprinkle the chopped fresh parsley on top for a pop of color.
