Frozen burritos are a quick and versatile meal prep solution packed with hearty fillings like beans, rice, cheese, and your favorite proteins.
Ingredients
– 6 large flour tortillas
– 1 cup cooked rice
– 1 cup black beans (drained and rinsed)
– 1 cup shredded cheddar cheese
– 1 cup cooked and seasoned ground beef (or shredded chicken)
– 1/2 cup salsa
– 1/4 cup sour cream
– 1/4 cup diced bell peppers (optional)
– 1/4 cup chopped cilantro (optional)
Instructions
1. Lay out each tortilla on a flat surface.
2. Spread a small amount of sour cream on each tortilla.
3. Add a layer of cooked rice, black beans, protein of choice, shredded cheese, and salsa.
4. Sprinkle diced bell peppers and cilantro if desired.
5. Fold in the sides of the tortilla, then roll tightly into a burrito shape.
6. Wrap each burrito individually in foil or plastic wrap.
7. Place wrapped burritos in a freezer-safe container or bag and freeze for up to 3 months.
8. To reheat, remove wrapping and microwave for 2-3 minutes or bake at 375°F (190°C) for 20-25 minutes.
