Ingredients
– 1 large onion
– 1 cup whole wheat flour
– 1 cup unsweetened almond milk
– 1 tsp paprika
– 1 tsp garlic powder
– 1 tsp onion powder
– 1 tsp salt
– 1 tsp black pepper
– Cooking spray
**For Guacamole:**
– 2 ripe avocados
– 1 lime (juiced)
– 1/4 cup chopped cilantro
– 1/2 tsp cumin
– 1/2 tsp paprika
– Salt to taste
Instructions
1. Preheat oven to 400°F (200°C).
2. Peel the onion and cut it into a blooming shape by slicing into it without cutting all the way through.
3. Mix flour, paprika, garlic powder, onion powder, salt, and pepper in a bowl.
4. Dip the onion into almond milk, then coat with the flour mixture. Repeat if necessary for full coverage.
5. Place the onion on a baking sheet, spray with cooking spray, and bake for 25-30 minutes until crispy.
6. For guacamole, mash avocados in a bowl, mix with lime juice, cilantro, cumin, paprika, and salt.
7. Serve the blooming onion with guacamole for dipping.
Notes
– To make the onion even crispier, broil for the last 2 minutes of baking.
