Ingredients:
✅ 2 boneless chicken breasts
✅ 1 cup of pasta (any small variety)
✅ 2 carrots, peeled and diced
✅ 2 cups of greens (spinach or kale)
✅ 1 large onion, diced
✅ 2 cloves of garlic, minced
✅ 1 tablespoon of olive oil
✅ 6 cups of chicken broth
✅ Salt and pepper to taste
✅ Loaf of bread for serving
Instructions:
1️⃣ In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sauté until the onions are translucent.
2️⃣ Add the diced carrots to the pot and cook for another 5 minutes.
3️⃣ Add the chicken breasts, chicken broth, salt, and pepper. Bring the mixture to a boil then reduce the heat to low, cover the pot and let it simmer for about 20-30 minutes until the chicken is cooked through.
4️⃣ Once the chicken is cooked, remove it from the pot and shred it using two forks.
5️⃣ In the meanwhile, add the pasta to the pot and cook it in the broth for the time indicated on the pasta box.
6️⃣ When the pasta is cooked, add back the shredded chicken and the greens. Stir well and let the soup cook for another 5 minutes until the greens are wilted.
7️⃣ Ladle the soup into bowls and serve it warm with the loaf of bread on the side.
