Hearty Meatball and Pasta Soup

Hearty Meatball and Pasta Soup is a comforting bowl of tender meatballs, savory broth, and pasta, creating a warm, satisfying meal perfect for chilly evenings.

Ingredients:
✅ 500g of ground beef
✅ 1 cup of pasta (small shapes)
✅ 1 can of diced tomatoes (400g)
✅ 2 cups of green leafy vegetables (spinach, kale, or Swiss chard)
✅ 1/2 cup of grated cheese (Parmesan or Cheddar)
✅ 1 medium onion, finely chopped
✅ 2 cloves of garlic, minced
✅ 1 teaspoon of dried basil
✅ Salt and pepper to taste
✅ 2 tablespoons of olive oil
✅ 1.5 litres of beef broth

Instructions:
1️⃣ In a bowl, mix the ground beef, half of the chopped onion, garlic, dried basil, salt, and pepper. Form into small meatballs. Set aside.
2️⃣ Heat olive oil in a large pot over medium heat. Add the meatballs and cook until brown on all sides. Remove and set aside.
3️⃣ In the same pot, add the remaining onion and sauté until soft. Add the diced tomatoes, beef broth, and bring to a boil.
4️⃣ Add the pasta and cook for 10 minutes.
5️⃣ Return the meatballs to the pot and add the green leafy vegetables. Simmer for another 10 minutes or until the pasta and vegetables are tender.
6️⃣ Season with salt and pepper to taste. Ladle the soup into bowls and sprinkle with grated cheese before serving.
