Lime Mint Bundt Cake with Creamy Icing

Ingredients:
✅ 2 cups all-purpose flour
✅ 2 teaspoons baking powder
✅ 1/2 teaspoon salt
✅ 1 cup butter, softened
✅ 1 cup granulated sugar
✅ 4 large eggs
✅ 2 teaspoons pure vanilla extract
✅ Zest and juice of 2 limes
✅ 1/4 cup fresh mint leaves, finely chopped
✅ Green food coloring (optional)
✅ For the icing: 1 cup powdered sugar, 2-3 tablespoons milk

Instructions:
1️⃣ Preheat your oven to 350°F (175°C) and grease a bundt cake pan.
2️⃣ In a bowl, combine the flour, baking powder, and salt. Set aside.
3️⃣ In another bowl, cream the butter and sugar together until light and fluffy.
4️⃣ Beat in the eggs one at a time, followed by the vanilla, lime zest, lime juice, and chopped mint. Add a few drops of green food coloring if desired.
5️⃣ Gradually add the flour mixture to the butter mixture, mixing until just combined.
6️⃣ Pour the batter into the prepared bundt pan and smooth the top.
7️⃣ Bake for 45 minutes, or until a toothpick inserted into the cake comes out clean.
8️⃣ Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
9️⃣ To make the icing, whisk together the powdered sugar and milk until smooth. Drizzle over the cooled cake.
