- 1 lb ground beef or lamb
- 1 cup diced onions
- 2 garlic cloves, minced
- 1 cup diced carrots
- 1 cup diced celery
- 1 cup frozen peas
- 4 cups beef broth
- 2 cups mashed potatoes
- 1 tbsp tomato paste
- 1 tsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add ground meat and cook until browned. Remove and set aside.
- In the same pot, sauté onions, garlic, carrots, and celery until softened.
- Stir in tomato paste, Worcestershire sauce, thyme, and rosemary. Cook for 2 minutes.
- Return the meat to the pot and pour in beef broth. Simmer for 20 minutes.
- Add peas and cook for an additional 5 minutes.
- Stir in mashed potatoes until creamy and well-blended.
- Adjust seasoning with salt and pepper. Serve hot.

- Substitute ground meat with vegetarian protein for a meatless option.
- For a thicker soup, add more mashed potatoes.
