Vibrant Elbow Pasta Salad

Bursting with color and flavor, this Vibrant Elbow Pasta Salad combines tender pasta, crisp vegetables, and zesty dressing for a refreshing, satisfying bite.

Ingredients:
✅ 2 cups of elbow pasta
✅ 1 cup of diced carrots
✅ 1 cup of green peas
✅ 1/2 cup of chopped red onions
✅ 1 cup of chunks of yellow cheese
✅ A handful of fresh dill sprigs
✅ 1 cucumber
✅ Salt and pepper to taste
✅ 1 tablespoon of olive oil

Instructions:
1️⃣ Boil the elbow pasta according to package instructions until al dente. Once cooked, drain and rinse under cold water to stop the cooking process.
2️⃣ While the pasta is cooking, dice the carrots, chop the red onions, and cut the yellow cheese into chunks.
3️⃣ In a separate saucepan, boil the peas until tender. Once cooked, drain and set aside.
4️⃣ Slice the cucumber and set it aside for garnish.
5️⃣ In a large bowl, combine the cooked pasta, diced carrots, green peas, chopped red onions, and cheese chunks.
6️⃣ Drizzle olive oil over the salad, add salt and pepper to taste, and gently mix until all the ingredients are well combined.
7️⃣ Garnish the salad with fresh dill sprigs and cucumber slices.
8️⃣ Serve the salad immediately, or refrigerate for a couple of hours for the flavors to meld together.
