Ingredients

  • 2 boneless skinless chicken breasts
  • 2 teaspoons Cajun seasoning
  • 8 ounces pasta fettuccine or rotini
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 cup heavy cream
  • 1/2 cup parmesan cheese grated
  • Salt and pepper to taste
  • Fresh parsley chopped, for garnish

Instructions

Prepare the Chicken:

  • Season the chicken breasts with Cajun seasoning on both sides. Heat olive oil in a large skillet over medium-high heat and cook the chicken for 5-7 minutes per side until golden brown and cooked through. Remove from the skillet and set aside to rest.

Cook the Pasta:

  • Cook the pasta in a pot of boiling salted water according to package instructions. Drain and set aside.

Make the Sauce:

  • In the same skillet, add minced garlic and sauté for 30 seconds until fragrant. Stir in heavy cream and bring to a simmer. Add parmesan cheese and stir until the cheese melts and the sauce thickens. Season with salt and pepper.

Combine the Dish:

  • Add the cooked pasta to the skillet and toss to coat with the sauce. Slice the chicken breasts and place on top of the pasta. Garnish with fresh parsley and serve immediately.

Notes

  • Cajun Spice: Adjust the amount of Cajun seasoning to your spice preference.
  • Cheese Options: You can substitute parmesan with pecorino for a slightly different flavor.
  • Vegetables: Feel free to add bell peppers or mushrooms to the dish for extra texture and flavor.
