Ingredients
  

  • 1 pound Italian sausage mild or spicy
  • 1 cup onion diced
  • 3 cloves garlic minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions
 

Prepare the Ingredients:

  • In a large pot, cook the Italian sausage over medium heat until browned. Remove excess grease if necessary.
  • Add the diced onion and minced garlic to the pot. Sauté for 3-4 minutes until softened and fragrant.

Cook the Soup:

  • Pour in the chicken broth and bring to a simmer. Cook for 10 minutes to let the flavors meld.
  • Stir in the heavy cream and fresh spinach. Simmer for an additional 5 minutes until the spinach is wilted.

Finish the Soup:

  • Remove the soup from heat and stir in the grated Parmesan cheese. Season with salt and pepper to taste.
  • Serve the soup hot, garnished with additional Parmesan cheese if desired.

Notes

This soup pairs well with crusty bread or a side salad. For a spicier version, use hot Italian sausage or add red pepper flakes.
