Ingredients
  

  • - 2 cups cooked chicken shredded or cubed
  • - 3 medium potatoes peeled and diced
  • - 1 carrot diced
  • - 1 celery stalk chopped
  • - 1 small onion finely chopped
  • - 3 cups chicken broth
  • - 1 cup heavy cream
  • - 2 tbsp butter
  • - 2 tbsp all-purpose flour
  • - Salt and pepper to taste
  • - Fresh parsley for garnish
  • - Grated Parmesan cheese optional

Instructions
 

  • 1. In a large pot, melt butter over medium heat. Add onion, carrot, and celery; sauté until softened.
  • 2. Sprinkle flour over the vegetables and stir to coat. Cook for 1-2 minutes.
  • 3. Gradually add chicken broth while stirring to avoid lumps.
  • 4. Add diced potatoes and bring to a boil. Reduce heat and simmer until potatoes are tender.
  • 5. Stir in the cooked chicken and heavy cream. Simmer for 5 minutes.
  • 6. Season with salt and pepper to taste.
  • 7. Serve hot, garnished with parsley and Parmesan cheese if desired.

Notes

For a thicker consistency, mash some of the potatoes before adding the chicken. For extra flavor, add garlic or thyme during sautéing.
