Ingredients
  

  • - 6 large flour tortillas
  • - 1 cup cooked rice
  • - 1 cup black beans drained and rinsed
  • - 1 cup shredded cheddar cheese
  • - 1 cup cooked and seasoned ground beef or shredded chicken
  • - 1/2 cup salsa
  • - 1/4 cup sour cream
  • - 1/4 cup diced bell peppers optional
  • - 1/4 cup chopped cilantro optional

Instructions
 

  • 1. Lay out each tortilla on a flat surface.
  • 2. Spread a small amount of sour cream on each tortilla.
  • 3. Add a layer of cooked rice, black beans, protein of choice, shredded cheese, and salsa.
  • 4. Sprinkle diced bell peppers and cilantro if desired.
  • 5. Fold in the sides of the tortilla, then roll tightly into a burrito shape.
  • 6. Wrap each burrito individually in foil or plastic wrap.
  • 7. Place wrapped burritos in a freezer-safe container or bag and freeze for up to 3 months.
  • 8. To reheat, remove wrapping and microwave for 2-3 minutes or bake at 375°F (190°C) for 20-25 minutes.
