Ingredients
  

  • 1 pound Italian sausage mild or spicy
  • 4 cups chicken broth
  • 3 cups russet potatoes thinly sliced
  • 2 cups kale chopped
  • 1 cup heavy cream
  • 1 teaspoon red pepper flakes optional
  • 1 medium onion diced
  • 3 cloves garlic minced

Instructions
 

Cook the Sausage:

  • In a large pot, cook the Italian sausage over medium heat until browned. Remove and set aside.

Prepare the Broth:

  • In the same pot, sauté the onion and garlic until fragrant. Add the chicken broth and sliced potatoes. Simmer until the potatoes are tender.

Combine and Simmer:

  • Return the sausage to the pot. Stir in the kale and heavy cream. Simmer for an additional 10 minutes.

Serve:

  • Ladle the soup into bowls and serve hot, optionally garnished with red pepper flakes for a kick of heat.
