Ingredients
  

  • 6 slices bacon chopped
  • 1 cup dried green lentils rinsed
  • 1 onion finely chopped
  • 2 cloves garlic minced
  • 2 stalks celery chopped
  • 4 cups chicken or vegetable broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • Salt to taste
  • 2 tablespoons olive oil

Instructions
 

Cook the Bacon:

  • Heat the olive oil in a large pot over medium heat. Add the chopped bacon and cook until crispy. Remove some for garnish, leaving the rest in the pot.

Sauté the Vegetables:

  • Add the onion, garlic, carrots, and celery to the pot. Cook for 5–7 minutes, stirring occasionally, until softened.

Cook the Lentils:

  • Stir in the lentils, chicken or vegetable broth, thyme, black pepper, and salt. Bring to a boil, then reduce heat and simmer for 30–35 minutes until the lentils are tender.

Finish and Serve:

  • Ladle the soup into bowls, garnish with crispy bacon, and serve warm.

Notes

  • Storage: Leftover soup can be stored in an airtight container in the fridge for up to 3 days.
  • Make It Vegetarian: Use vegetable broth and skip the bacon for a meatless version.
