Ingredients
  

  • 1 lb ground beef or lamb
  • 1 cup diced onions
  • 2 garlic cloves minced
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup frozen peas
  • 4 cups beef broth
  • 2 cups mashed potatoes
  • 1 tbsp tomato paste
  • 1 tsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add ground meat and cook until browned. Remove and set aside.
  • In the same pot, sauté onions, garlic, carrots, and celery until softened.
  • Stir in tomato paste, Worcestershire sauce, thyme, and rosemary. Cook for 2 minutes.
  • Return the meat to the pot and pour in beef broth. Simmer for 20 minutes.
  • Add peas and cook for an additional 5 minutes.
  • Stir in mashed potatoes until creamy and well-blended.
  • Adjust seasoning with salt and pepper. Serve hot.

Notes

  • Substitute ground meat with vegetarian protein for a meatless option.
  • For a thicker soup, add more mashed potatoes.
